Itinerary

Day 1 - Benvenuti in Toscana! - Arrival at the Villa

Welcome to Tuscany! Guests using the included airport transfers will leave either Pisa Airport or Florence Airport at 4:00 pm local time. We’ll then make our way through the Tuscan countryside to Fattoria di Scaletta, our home for the week near San Miniato. Your trip host, Patricia will welcome you!

Once everyone has settled into their rooms, there will be time to explore the villa, unpack, meet the rest of the group and get comfortable before our first evening together.

We’ll start the trip properly with a three-course welcome dinner at the villa, giving everyone a chance to get to know each other over good food and a very Tuscan first night.

Overnight: Fattoria di Scaletta, San Miniato

Day 2 - Cooking in our Tuscan Villa

After breakfast at the villa, today is all about one of the best parts of Tuscany: the food. A local cook and English-speaking guide will come directly to the villa with the ingredients and equipment for a private hands-on cooking class.

Rather than watching someone else cook, we’ll prepare the meal together from scratch in the villa kitchen. The exact dishes will be chosen closer to the trip and may vary depending on the season, but the class is built around traditional Tuscan cooking and local ingredients.

Once the cooking is done, we’ll sit down together and eat the meal we’ve just prepared. Local wine is included for guests aged 18 and over; guests under 18 will be served non-alcoholic alternatives.

The rest of the day will be free to enjoy the villa, relax outside, go for a walk or simply do absolutely nothing for a while.

Overnight: Fattoria di Scaletta, San Miniato

Day 3 - Winemaker for a Day

After breakfast, we’ll head out for one of the most hands-on experiences of the week: becoming winemakers for a day at a small working Tuscan winery.

The experience takes us beyond a normal wine tasting. We’ll spend time in the vineyard and the cellar with the winemaker, learning how the work changes throughout the year and getting involved in whatever seasonal jobs are genuinely happening at the winery when we visit. Depending on the season, that can mean working with the vines, checking equipment, helping with cellar work, labelling bottles or tasting wine directly from the barrel.

We’ll then sit down for a homemade lunch with the winemaker and learn more about the estate, the grapes and the wines over a guided tasting.

Overnight: Fattoria di Scaletta, San Miniato

(B, L)

Day 4 - Villa Life | A Proper Slow Day

Today is deliberately left free. After breakfast, there is no organised excursion and no alarm clock unless you want one.

Spend the day enjoying the villa, sit outside with a book, take a local walk, have a long lunch somewhere nearby or simply enjoy having nowhere you need to be. After several organised experiences, this is the day to actually live in Tuscany for a little while instead of rushing around it.

If the group feels like doing something together, your trip host, Patricia may organise an informal walk or spontaneous local plan, but there is no fixed activity included today.

Overnight: Fattoria di Scaletta, San Miniato

(B)

Day 5 - Tuscan Towns

After breakfast, we’ll leave the villa and head out to explore some of Tuscany’s towns. The exact route will be kept flexible and confirmed closer to the trip so we can choose the best combination for the group and local conditions.

This is not a guided city-tour day. Transport is taken care of, but once we arrive the idea is to explore independently: wander through old streets, find a café, visit churches or viewpoints, browse local shops, stop for gelato, have lunch wherever looks good and generally spend the day at your own pace.

We’ll agree on meeting points and times before everyone heads off, then regroup for the onward journey and return to the villa later in the day.

Overnight: Fattoria di Scaletta, San Miniato

(B)

Day 6 - Wine Tasting Comes to the Villa

After breakfast, we’ll have another relaxed start before a private wine expert comes to the villa for an afternoon tasting.

We’ll taste a selection of Tuscan wines while learning more about the grapes, producers and styles that make the region so famous. The tasting will be accompanied by local food and small Tuscan bites, making this much more of a relaxed villa afternoon than a formal classroom-style tasting.

Wine is served only to guests aged 18 and over. Guests under 18 are welcome to join the experience and will be given non-alcoholic alternatives.

The evening is free afterwards, so nobody needs to get back into a vehicle once the tasting is finished.

Overnight: Fattoria di Scaletta, San Miniato

(B, L)

Day 7 - The All-Important Princess Ball

Our final full day focuses on another essential part of Tuscan food culture: extra virgin olive oil. We’ll visit a local olive-oil producer and learn what actually separates a high-quality local oil from the mass-produced versions most of us buy at home.

The experience explains the olive-growing and production process, the machinery used at the mill and how the oil is extracted. We’ll also take part in a guided tasting, learning how to taste olive oil properly and how to recognise different qualities and flavours.

Because we are travelling in May rather than during the autumn harvest, we should not expect to see olives actively being pressed; instead, the visit focuses on the mill, production process and tasting.

That evening we’ll come together for our three-course farewell dinner and one final long Tuscan meal before heading home the next day.

Overnight: Fattoria di Scaletta, San Miniato

(B, D)

We’ll have one last breakfast at the villa before packing up and saying goodbye to Tuscany.

The two included departure transfers will leave the villa at 10:00 am local time: one for Pisa Airport and one for Florence Airport. Guests should book flights that work with the scheduled group-transfer timing; anyone travelling at a different time will need to arrange their own transport.

Day 8 - Arrivederci Tuscany! | Departure Day

Meet your tour host: Patricia

Dear Traveller! I’m Patricia, founder of Beyond Trails & Tales. Travelling was always my biggest passion, which not so slowly turned into my profession. From a young age I always liked to guide my friends and family through different destinations. When leading a trip I always thrive to ensure everyone is feeling safe and most of all, are enjoying themselves. I’m always up for a talk, exchanging funny stories - and I usually don’t hold back with my crazy side. You’ll definitely see me jumping from the top of the boat:) I’m also always up for a fun sidequest - I’m more than happy to watch the sunrise with you, and organize any last-minute idea you might have - like a lunch with a local family in Tonga which happened to be one of the requests I got the last time. (We had heaps of fun even though we didn’t understand a word).

Is this trip for me?

Your Tuscan Home Away From Home

Tucked away in the Tuscan countryside near the village of Gavena, Fattoria di Scaletta is our home base for the adventure. Think slow mornings with coffee in the garden, long evenings around the dinner table, and plenty of space to unwind after a day exploring Tuscany.

With 10 bedrooms, 6 bathrooms, a fully equipped kitchen, and generous shared living spaces, there's room to spread out without losing that lovely feeling of being together.

Outside, you'll find a private patio, a beautiful garden, and a seasonal swimming pool — perfect for an afternoon dip, a little downtime, or doing absolutely nothing. Which, occasionally, is a perfectly acceptable holiday activity.

And while it feels wonderfully tucked away, we're in a fantastic spot for exploring the region. Vinci, Leonardo da Vinci's hometown, and the historic Medici villa at Cerreto Guidi are both nearby, with the rest of Tuscany waiting beyond.
